The Viognier grape has perfectly adapted to our hills and climate; the vineyard is to be found in the surroundings of Castiglione Falletto.

Processing: the grapes are harvested when fully matured and the vinification starts straight away when they get into the cellar. First it comes the soft pressing; follows an off-the-skins fermentation in stainless steel tanks at a controlled temperature of 17°-18°C.
Maturation and aging: the wine is kept in stainless steel tanks for 3 months to preserve its freshness and its fruity feature; a short aging in the bottle follows before being sold.
Characteristics: an excellent white wine which boasts a beautiful straw-yellow colour with pale green gleams when young. The Vionié has an elegant nose with notes of herbs and field flowers enhanced by hints of fruit. The palate is dry and smooth with mineral liveliness and citrus freshness. This is a complex, rich and well-balanced wine with a long finishing. It marche perfectly fish starters and first courses as well as second courses of fish or white meat. Vionié is a charming white with an extraordinary longevity. Serving temperature: 8°-10°C
