The Sauvignon Blanc grape has perfectly adapted to our hills and climate; the vineyard is to be found in the surroundings of Castiglione Falletto.

Processing: the grapes are harvested when fully matured and the vinification starts straight away when they get into the cellar. First it comes the soft pressing; follows an off-the-skins fermentation in stainless steel tanks at a controlled temperature of 17°-18°C.
Maturation and aging: the wine is kept in stainless steel tanks for 3 months to preserve its freshness and its fruity feature; a short aging in the bottle follows before being sold.
Characteristics: the Sauvignon is an elegant, dry, slightly aromatic white wine; a beautiful straw-yellow colour with a glint of pale green catches the eye. Its captivating nose – intensely grassy – stands out for its freshness: the palate is strong enhanced by delicate aromas of sweet green pepper and gooseberry. Perfect with any starters, asparagus, mixed vegetables, spicy salami, fish, snails, fried food and onion soup; excellent as an apéritif.
